The Carolina Reaper is the world's hottest chilli, averaging 1,569,300 Scoville Heat Units (SHU) with individual pods measuring over 2.2 million SHU. Grown in Victoria, Australia by Chilli Kings.

Rated Super Hot on the Scoville Scale. For context, a jalapeño averages 5,000 SHU — the Carolina Reaper is approximately 300× hotter.

Flavour & Details

Despite its reputation, the Carolina Reaper is not just heat — it has a genuinely complex flavour profile. The initial bite is surprisingly sweet and fruity, with notes of cherry, cinnamon, and a hint of chocolate. That sweetness lasts about two seconds before the capsaicin takes over, delivering an intense, building heat that lingers for up to 30 minutes.

Use sparingly: a single pod is enough to heat an entire pot of sauce, stew, or curry. Popular uses include hot sauce making, BBQ marinades, chilli con carne, and spicy infused oils. Handle with gloves and keep away from eyes.
